There have been a number of applications for the iPhone that look to be useful to scientists.

iPhone Configuration Utility 1.0 for Mac OS X
iPhone Configuration Utility lets you easily create, maintain, and sign configuration profiles, track and install provisioning profiles and authorized applications, and capture device information including console logs.
Here are instructions for using this facility to log onto WiFi networks.

TouchTerm, is an SSH client for iPhone/iPod touch. According to the notice on the iTunes store, a pro version will be also be offered at a later date. For those of you looking for an SSH client (not just telnet), this may be worth a look.

Molecules, a molecule viewer this is a rapidly improving application with a very responsive developer.

Atom-in-a-box by Dauger Research. It displays atomic orbitals in real-time and rather than just as plot of the spherical harmonics, as is shown in many Quantum mechanics textbooks, this program displays the electron orbital as a 3D cloud.

PCalc is a scientific calculator by TLA Systems, their is also RPNCalc.
